Off topic slightly - Apache https redirect

There seems to be a multitude of ways to redirect from http to https.

Letsencrypt rewrote my conf for port 80 traffic to https but when a customer used http://mysite.com it brought up the Apache "this is working" page.

Any pointers to the absolutely correct way?
