gmail may not be the best example of how mail forwarding is
performed.

Oh... by "forwarding" do you mean from an email client, or do you
really mean RELAY (accept email for users not on your system, and relay
them to other servers). If so, you'd be better served using something
like Sendmail, qmail, Postfix. (If you are on Windows, you could try
configuring its limited SMTP server
